Sweet Bitter Gourd Curry


Ingredients:
Bitter Gourd 2-3
Onion 1
Garlic 3 Pods
Green Chiles 3
Jaggery (grated)
1 tbspRed Chile Powder
1/2 tspCumin Seeds
a pinchSalt to taste
Oil 2 tbsps
Method of preparation:
Remove ends, wash and slice green chiles.Peel and chop onion finely.Peel and finely chop garlic pods.Wash, remove ends and chop bittergourd into small pieces.Sprinkle few tbsps of salt on the chopped bittergourd and mix thoroughly.Let them stand for about 30 - 45 minutes.Rinse under cold water, drain and squeeze excess water.
Heat oil in a pan, add cumin seeds and garlic.Then add sliced chiles and chopped onion.Once onion turns little soft, add bitter gourd pieces.Cook for about 10 - 15 minutes or until bitter gourd turns soft.Finally add red chile powder and jaggery.Stir fry for few seconds and remove from heat.Serve with rice.
Notes: Make sure bitter gourd / bitter melon is thoroughly cooked
